1 bag of Mixed Salad Greens or Romaine Lettuce
2 cups of shredded or diced cooked chicken
½ cup sliced green onions
2/3 cups of slivered toasted almonds
½ cup shredded carrots
1 avocado, peeled, pitted and diced
½ cup grape tomatoes sliced in half Toasted Sesame Seeds for sprinkling
2 tablespoons Olive Oil
2 tablespoons Rice Vinegar
1 tablespoon low sodium soy sauce
1 tablespoon honey
1 teaspoon toasted sesame oil
½ teaspoon ground ginger
½ teaspoon minced garlic Pepper to taste
Place all Vinaigrette Ingredients in a mason jar and shake together with the lid on until well mixed.
Combine the mixed greens, chicken, green onions, almonds, carrots, tomatoes, and avocado together in a bowl.
Drizzle with the vinaigrette and toss until combined.
Sprinkle with sesame seeds and serve immediately.
